乾德三年 四月十三 宋太祖诏令开封府 “令京城夜市至三鼓已未不得禁止”。 从此，宋朝打破了长期以来的夜禁规定。 而宋朝的夜市之所以出现车水马龙、络绎不绝的盛况，当然最具吸引力的还是当地的美食了，毕竟民以食为天。 禾稷烧烤酒肆是一家以宋代美学为基础，而构建起来的小型餐厅。之所以选择以宋代美学为背景，并非是单纯的对于其美学价值的偏好，而是从烧烤酒肆这一业态本身而产生的思考。 烧烤，作为华人日常生活中最为重要的夜宵食品之一，与人们的夜间社交与休闲活动产生着紧密而深远的影响。那么作为夜间的商业行为，便与夜市的成因不无关系。 众所周知，在古代封建社会时期，官府对于民众的日常管理极为严苛，夜间活动更是难上加难。而宋代时期，为了活跃市场，推动经济发展，则全面取消了宵禁。这才得以对夜间商业的发展起到了推波助澜的作用。于是，我们希望以一种溯源的姿态去看待禾稷，赋予其应有的生命力。
